The best way to prepare to open a shop is to write a business plan.

First thing is to pick out what you can make the best, and there is your first choice.
Second choice I would pick is anything and everything you want on your menu or in your displays. You could have specialty items on the menu that have to be pre ordered then you could have items that are made and kept in regular stock.
If you want to really narrow it down to what you serve to the people, I would recommend perhaps surveying the area you are going to open up shop and find out what the people would like made in a more convenient location to them. That is really the only real solution to this question I think.
