Profits from My Kitchen - How to Operate a Home-Based Bakery

    I was an instructional design specialist who loved to bake. In fact, I could bake day and night if I had the time and funds. Four years ago I moved to Cary, NC and learned that I could operate a bakery from my home. Yes, it's true there are 11 states in the United States that will allow you to operate a home-based bakery; along with countless cities, counties and small towns. My speciality was pies and I sold "random acts of pieness" and delivered delicious pies in a basket as unique affordable gifts. I delivered within a 25 mile radius and shipped certain pies across the U.S.all from the comfort of my home.

    I was asked by friends and customers how I started and if I would teach them. I took the idea to the local lifelong learning program and "How to Operate a Home-Based Bakery-Profits from My Kitchen" was born. I have been teaching the course for three years and last year I designed the course for online learning. Both the online and face-to-face course is 4 weeks. The online course allows you to have access to the material 24/7 and students meet in the chat room and talk to other seasoned HBBs (home-based bakers) gathering information and encouragement. The face to face course meets once a week, with one online chat. The face to face course is only available in Cary, NC.

    There are currently 11 states that allow home-based bakers to sell their baked goods directly to the public. The states are: Iowa, Kentucky, Maine, New Hampshire, North Carolina, Ohio, Pennsylvania, Tennessee, Utah, Virginia, and Vermont, along with numerous counties across the United States. In fact, in North Carolina you can bake cakes, pies, cookies, make candy, dried mixes, blend spices (e.g. Jerk, Barbecue rubs) and some sauces (e.g. barbecue and hot sauces).

    The course covers compliance regulations, food storage, food safety and sanitation; advertising/marketing, (press release design/alternative media submissions) pricing your product, branding, selling products online and more.

    Recently my student population has grown as more people are seeking ways to make extra money. I love teaching the classes and working with seasoned bakers from around North Amercia.

    My goal is to add a number of courses to support home-based bakers and home-food processors across the nation.
